A classic whole wheat chocolate chip cookie with a glass of milk! Match indeed made in heaven!

Imagine to be able to have a healthier version of the buttery classic. After receiving rave reviews about Inside Out Chocolate Chip M&M Cookies (Thank you all!), I decided to recreate them into a classic chocolate chip version. I used olive oil instead of butter this time around and skipped milk completely. The result was amazing. I am not claiming these cookies to be skinny or low-fat. They are still 120 calorie each (assuming you get exactly 30 cookies) but you won’t miss the evil fat here, trust me! Come on, olive oil is a good fat and so is whole wheat!

If you’re crispy cookie person then flatten the cookie dough a bit more as per your liking and let them bake for an extra minute or so. When baked thick and puffy, these cookies are soft and equally chocolicious. These cookies are also great as ice cream sandwiches. You won’t be able to stop at just one, I know you guys too well! ?

Whole wheat Chocolate Chip Cookies ~ Eggfree & Vegan

Yields: Around 30 cookies | Prep time: 15 minutes | Chill time: 30-60 minutes | Bake time: 14-15 minutes
Ingredients:
  • 3 Tbsp flaxseed powder + 9 Tbsp water
  • 1/2 cup olive oil (coconut oil or unsalted butter can be substituted)
  • 1/2 cup brown sugar
  • 1/4 cup date syrup
  • 2 Tbsp vanilla extract
  • 2 + 1/2 cups whole wheat flour
  • 1/2 Tbsp baking powder
  • 1/2 tsp salt
  • 1 + 1/4 cup mix of dark & milk chocolate chips

Directions:

  1. In a small bowl, mix together flax seed powder and water. Set aside for 10 minutes.
  2. In a medium bowl, sift together whole wheat flour, baking powder and salt. Set aside.
  3. In a large mixing bowl, whisk olive oil and sugar together til completely incorporated. Whisk in date syrup, vanilla extract and flax seed mixture.
  4. Stir in dry ingredients to the wet ingredients to form a dough. Fold in chocolate chips. Chill the dough in refrigerator for about 30 minutes to 1 hour.
  5. Preheat the oven to 160ºC/325ºF. Line the baking sheet with parchment paper. Take about 2 Tbsp of dough, form it into a ball between your palms and flatten them with fingers or a fork. The cookies won’t spread much while baking so flatten how much ever thickness you like. Bake them for 14-15 minutes. Let them cool on baking sheet for 5 minutes before transferring them on cooling rack to cool completely. The cookies will stay fresh for 1 week at room temperature stored in an airtight container.

Last 10 days were spent visiting family and hibernating during pleasant, cozy North-Indian winter. It was so relaxing. Generous hot mugs of ginger tea and coffee were gulped while the endless conversation flowed. Bowls of warm red carrot halwa, Gulab Jamuns, Sarson ka saag & Makke ki Roti (corn flat-bread) were devoured. Insane amount of homemade white butter was consumed with everything! Happiness!! Such wonderful days! I stayed away from the blog for the duration and I am back just in time 🙂

I know this is very last minute and most of you have already planned the menus for tomorrow (In that case, make these the next day!). Last minute planners, I am here at your rescue! Try this super-quick, super-simple yet ultra-delicious breakfast option for a total fuss-free Christmas morning. Oh, they are healthy of course! The pancakes are unbelievably soft and fluffy, that too without addition of any oil/butter. They require very few ingredients which I’m sure you will already have at your disposal! This way you can kick-start your morning on a right note 🙂

Honey-Cinnamon Whole-Wheat & Flax-seed Pancakes with Maple-Strawberry Compote

Yields: 12 pancakes | Prep time: 5 minutes | Cook time: 20-25 minutes | Total: 30 minutes

Ingredients:

Pancakes

  • 1 cup whole wheat flour
  • 4 Tbsp ground flax seed
  • 1 tsp ground cinnamon
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 2 eggs
  • 1 tsp vanilla extract
  • 4 Tbsp honey

Maple-Strawberry Compote

  • 1/2 cup pure maple syrup
  • 7-8 oz. fresh strawberries, cut into thick slices
  • 1 tsp vanilla extract

Directions:

  1. Sift together flour, flax seed, cinnamon, baking soda and salt in a medium bowl.
  2. In a large mixing bowl, whisk together buttermilk, eggs, vanilla extract and honey.
  3. Slowly add dry ingredients to wet ingredients & stir to combine.
  4. Heat a medium non-stick skillet to medium heat. Spoon a ladleful of batter into the center of the skillet and form a nice round pancake. Let cook till the bubbles start forming on the top surface and the bottom will be golden brown. Flip and cook for an additional minute or so until browned and cooked through. Handle them carefully while flipping as they are quite soft and delicate. Transfer each pancake to a plate until all batter is used up.
  5. Compote: In a small saucepan, heat the maple syrup and strawberries on a low heat. Let the mixture cook and come to a boil, stirring in between, about 5 minutes. Remove from the heat and stir in vanilla extract. Top the pancakes with the compote.

* You may serve these pancakes coated with peanut butter or with fresh fruit preserve.
* If you don’t have buttermilk, feel free to use plain or vanilla yogurt instead.

The recipe of these snickerdoodles is unbelievably simple, made with simple ingredients which I always have handy. I am sure you will too. I love everything cinnamon and these cookies fit the bill perfectly for all the cinnamon lovers! Perfect for the holiday season!

These snickerdoodles are soft, thick and pillowy with a subtle hint of maple syrup. I like my cookies soft so I baked them for just about 10 minutes but if you don’t then extend the baking time to 13 minutes.

To be honest, they are too good to be shared. Really, they turned out so awesome that I was tempted to eat the whole batch myself and not ship them at all! Best cookies ever!! You have to have to have to make these! Believe me & add it to your holiday baking list. ☺️

Instructions
  1. In a small bowl, whisk together flour, baking powder, baking soda and cinnamon. Set aside.
  2. In a bowl of your electric mixer, beat the butter until soft. Add sugar and beat until light and fluffy on a medium speed for about 1-2 minute. Beat in maple syrup and egg/flaxseed-egg.
  3. Gradually add dry ingredients to the bowl and beat at slow speed until no flour pockets remain. Let the dough chill in the refrigerator for 30 minutes to 1 hour. Do not skip this step as the dough is unmanageable at the room temperature.
  4. Preheat the oven at 180ºC / 350ºF. Line the cookie sheet with parchment paper.
  5. In a small flat dish, sieve together the topping ingredients. Take about 1 Tbsp of dough and form it into a ball between your palms. Roll the ball in the topping mixture making sure they get coated thick and even.
  6. Arrange the dough balls on cookie sheet 2-inch apart from each other and bake for 10-11 minutes. Do not overbake if you want soft cookies. The sides should be golden and center may seem soft but it will set once cooled. Bake for 2-3 minutes more if you prefer crispy cookies to soft. Let the cookies cool on a cookie sheet for 5 minutes before transferring it to a cooling rack. Once cooled completely, transfer it to an airtight container. Cookies keep fresh for about 7 days at room temperature.

Ooh-So Healthy Spinach & Cottage Cheese Pancakes

I am a huge fan of breakfast for dinner. Mainly because I love the simplicity of it. Plus our work schedules do not allow us to have an early dinner hence eating light at night is a way to go for me.

My Sunday was jam-packed with activities so I couldn’t stock the fridge for the coming week but luckily my favorite soppu (is a Kannada word & in English it simply means ‘greens’!!) vendor knocked on our door Monday morning to deliver fresh spinach and that saved me an impromptu visit to supermarket. 🙂

I wanted to make something new from this super-fresh spinach but I simply didn’t have time to get my mind around it until dinnertime! I was tired of eating same old Spinach-Cottage Cheese Gravy with flat-bread. Plus I wanted it to be quick (as usual!!! 😉 ) hence I decided to make one simple dish with the combination of Spinach, Cottage Cheese and Flour! And this is how Spinach & Cottage Cheese Pancakes were born! And of course I HAD to healthify them!!! 😉

Serves: 2, Makes around 10 pancakes

Ingredients:

  • 1 bunch fresh spinach rinsed thoroughly and dried, approximately 200 gms
  • 5-6 big cloves of garlic
  • 2-3 green chilis
  • 100 gms cottage cheese
  • salt and pepper to taste
  • 2 Tbsp chickpea flour
  • 2 Tbsp millet flour
  • 1 tsp flax-seed powder
  • 1/4 tsp baking soda
  • 1/2 tsp red chili flakes
  • 2 tsp oil, plus more to grease the skillet

Directions:

Place the green chilis, garlic and spinach in a blender. Sprinkle a bit of salt and blend them till pureed smooth. *Add water gradually as required.

Grate cottage cheese

Mix spinach puree, cottage cheese, chickpea & millet flour, flax-seed powder, chili flakes, baking soda, oil, salt and pepper in a large mixing bowl. Add water gradually till pancake-styled batter is formed.

Spread the ladle-full of batter on a greased skillet and spread it evenly. You can keep the size as per your comfort zone. See the color?!! 🙂

Turn them very carefully after 2-3 minutes of cooking on one side over a medium flame.

Serve them simply with tomato ketchup or dollop-full yogurt along with a bowl of soup or as is!

*Note:

You can have number of variations with this recipe:

  1. You can add a bunch of mint leaves along with spinach for added freshness and zing.
  2. You can add grated carrots and/or boiled corn in the batter.
  3. You can use these pancakes as a base and make a mix-vegetable filling or egg filling to stuff it with.

Possibilities are endless! So keep thinking and improvising!
